Ingredients

Dough:

  • ½ cup milk, room temperature
  • ¼ cup warm water (100–110°F / 38–43°C)
  • 2¼ tsp instant dry yeast (1 packet)
  • 3 Tbsp granulated sugar, divided
  • 3 large egg yolks
  • 1½ tsp vanilla extract
  • 2 to 2 ½  cups all-purpose flour
  • ½ tsp salt
  • ⅛ tsp ground nutmeg (optional)
  • 6 Tbsp unsalted butter, softened
  • Raisin Almond Filling:
  • 1 cup slivered almonds
  • 1 cup golden raisins
  • 1 cup dark raisins
  • Zest of 2 oranges
  • Zest of 2 lemons
  • 1½ tsp vanilla extract
  • ½ tsp orange extract
  • ½ cup packed brown sugar
  • 2 Tbsp white sugar
  • Crumb Topping:
  • ¼ cup + 2 Tbsp powdered sugar
  • ¼ cup all-purpose flour
  • 3 Tbsp softened butter
  • Egg Wash:
  • 1 egg
  • 1 Tbsp cream or milk

Steps

1. Activate the Yeast

In a large mixing bowl, stir together warm water and yeast. Let sit for 5–10 minutes until foamy.

2. Mix Wet Ingredients

Once yeast is active, stir in milk, sugar, egg yolks, and vanilla.

3. Mix Dry Ingredients

In a separate bowl, whisk together flour, salt, and nutmeg. Gradually add the dry mixture into the wet mixture until a rough dough forms. Add up to ½  cup more flour if the dough is too sticky.

4. Knead

Knead in butter, one tablespoon at a time, until the dough is soft and elastic (5–8 minutes).

5. First Rise

Place dough in a greased bowl, cover, and let rise in a warm place for 2 hours, or until doubled in size.

6. Prepare Filling & Crumbs

Mix the filling ingredients in one bowl. In another, combine crumb topping ingredients until clumpy.

7. Shape the Dough

Roll dough into a 10×14-inch rectangle. Spread most of the filling, reserving about ½ cup. Roll tightly, seal the edge with egg wash, fold in half lengthwise, and twist into a spiral.

8. Final Rise

Place shaped dough in a parchment-lined loaf pan or on a baking sheet. Brush with egg wash and sprinkle reserved filling and crumb topping on top. Let rise 1 hour, uncovered, until puffy.

9. Bake

Preheat oven to 350°F (175°C). Bake for 35–45 minutes, until golden brown and fully set. Tent with foil if browning too quickly. Internal temperature should be 190°F (88°C).

10. Cool & Serve

Cool in the pan for 15–20 minutes before transferring to a wire rack. Slice and enjoy warm or at room temperature.
