Brown Butter Vanilla Bean Glazed Peach Fritters

Ingredients

  • Dough (Base)
    ½ cup (120ml) milk, at room temperature
    ¼ cup (60ml) warm water (100–110°F / 38–43°C)
    2¼ tsp (1 packet) instant dry yeast
    3 Tbsp (38g) granulated sugar
    3 large egg yolks
    1½ tsp vanilla extract
    2 to 2¼ cups (250–280g) all-purpose flour, plus more for kneading
    ½ tsp salt
    ⅛ tsp ground nutmeg (optional, for warmth)
    6 Tbsp (85g) unsalted butter, softened



    Peach Filling
    4 peaches, diced (360g) (canned or fresh)
    ⅓ cup (75g) brown sugar
    1½ tsp (3g) cinnamon
    1 Tbsp (10g) cornstarch
    ¼ cup (60ml) water
    1 tsp (4g) vanilla extract

    1½ cups (190g) powdered sugar
    6 Tbsp (85g) salted butter, browned
    ⅓ cup (113g) maple syrup
    2 Tbsp (30ml) milk of choice
    1 tsp (4g) vanilla extract or paste
    Pinch of salt

Steps

Instructions

1. Prepare the Dough

  1. In the bowl of a stand mixer (or large mixing bowl), stir together the warm water and yeast. Let sit for 5–10 minutes until slightly foamy.
  2. Add the milk, sugar, egg yolks, and vanilla extract. Mix gently to combine.
  3. In a separate bowl, whisk together 2 cups of flour, salt, and nutmeg.
  4. Gradually add the dry mixture into the wet ingredients, mixing until a rough dough forms.
  5. Knead in the softened butter a tablespoon at a time until smooth and elastic (5–8 minutes).
  6. Place the dough in a lightly greased bowl, cover, and let rise in a warm spot for 2 hours, or until doubled in size.

2. Make the Peach Filling

  1. While the dough rises, add peaches, brown sugar, and cinnamon to a saucepan over medium-high heat. Cook 5 minutes, stirring occasionally, until peaches begin to soften.
  2. Stir cornstarch and water together in a small bowl, then pour into the peach mixture. Cook 1–2 more minutes until thickened.
  3. Remove from heat and stir in vanilla extract. Let the filling cool completely.

3. Assemble the Fritters

  1. Cut 8 medium parchment squares and place them on baking sheets.
  2. Turn risen dough onto a lightly floured surface, form into a rectangle, and roll into a 12×16″ sheet.
  3. Spread cooled peach filling evenly over the dough. Sprinkle ¼ cup flour over the filling to help absorb excess moisture.
  4. Fold each short side of the dough to the center, pinch seams, then cut into a 1″ grid pattern. Toss the pieces together gently.
  5. Form into 8 round fritters, compacting slightly, and place each onto a parchment square. Cover loosely and rest while you heat the oil.

4. Fry the Fritters

  1. Heat 2″ of oil in a heavy-bottomed pot to 350–370°F (175–188°C).
  2. Carefully place fritters into oil (with parchment), remove parchment after 30 seconds, and fry 2–3 minutes per side until deep golden brown.
  3. Transfer to a paper towel-lined rack to drain.

5. Make the Glaze

  1. In a bowl, whisk together powdered sugar, browned butter, maple syrup, milk, vanilla, and salt until smooth.
  2. Dip slightly cooled fritters (top side down) into the glaze, then return to rack until set.

Baker’s Tip

These fritters are best eaten the same day, but you can store them in an airtight container for up to 2 days. Reheat briefly in the oven to restore crispness.
